It's all in the subjective preference of the owner and Velar lover, but I had a pretty similar spec and in the last minute got rid of the following:
- Configurable Dynamics => you probably use it ones or twice, thats it. What is the use of a G-meter in a SUV? Stopwatch?
- Terrain Response 2 => 99% of the time I'll drive on roads, so no need for an automatic setting
- Cabin Air Ionisation => very limited usability, read the manual
- Lockable Cooled Glovebox => box is rather small and not suited for a bottle, so very limited use

As said, very personal choices, otherwise I really like your spec!

I fully agree and don't get why not choosing a FE instead.

Agree with comments about the configurable dynamics and terrain response 2, are unlikely to be used by most and possibly also the wade sensing (you can option surround camera WITHOUT wade sensing) unlikely to be used by most - but I would have thought FULL extended leather upgrade AND Head UP Display should be high on options list for such an otherwise highly spec'd car.
